Breakfast Casserole

Ingredients:

1 pound ground breakfast sausage
12 eggs
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can milk
1 (4.5 ounce) can sliced mushrooms, drained
1 pound tater tots, thawed
1/2 cup shredded Cheddar cheese

Method: 

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.

  • In a large bowl, beat together eggs, soup and milk. Stir in sausage and mushrooms; pour into prepared pan. Add tater tots, distributing evenly in pan.

  • Bake in preheated oven for 45 to 50 minutes. Remove from oven and sprinkle on cheese, bake an additional 10 minutes

Swedish Oven Pancakes (christmas)

Ingredients:   4Eggs
                    3 c  Milk
                    4 tb Butter, melted
                    2 c  Flour
                    1 ts Salt
                    2 tb Sugar

Method: 

Preheat oven to 425 degrees F.swedish oven pancakes

In a bowl, beat eggs well; add milk, butter, flour, salt, and sugar.

Bake in a greased 9x13 inch pan for about 25 to 30 minutes. Cut into squares and serve immediately with butter and lots of maple syrup.

Christmas Morning Breakfast Tacos

 Ingredients:

       1 md Potato, boiled, diced or grated
      4 sl Bacon
      4    Eggs, lightly beaten
      4    Flour tortilla

 

Method:

Cook bacon until just getting crispy. Remove and drain well.

Place potato in the pan, and cook, turning occasionally, until well browned and crispy.

Cut bacon into 1 inch pieces, and add to potatoes. Immediately pour eggs over the potato/bacon mixture, and cook, stirring frequently, until firm.

Spoon mixture into heated flour tortillas; roll up and serve.

Chocolate Brunch Waffles

Ingredients:

2 1/4 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup NESTLE TOLL HOUSE Semi-Sweet Chocolate Morsels
3/4 cup butter
1 1/2 cups milk
3 large eggs
1 tablespoon vanilla extract
 Toppings (whipped cream, chocolate shavings, sifted powdered sugar, fresh fruit, ice cream)

Method:chocolate brunch waffles

  • COMBINE flour, sugar, baking powder and salt in large bowl. Microwave morsels and butter in medium, microwave-safe bowl on HIGH (100 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Cool to room temperature. Stir in milk, eggs and vanilla extract. Add chocolate mixture to flour mixture; stir (batter will be thick).
  • COOK in Belgian waffle maker* according to manufacturer's directions. Serve warm with your choice of toppings.
